Reunion Recipes

I had requests for a couple of my bread recipes that I made for our reunion breakfast. I figured that posting them on my blog would be the easiest way to get them out to the masses. :) So, here goes...

Lemon Poppy Seed Zucchini Bread (Thanks Heather! It was a hit!)

4 c. flour
1 1/2 c. Sugar
1 package (3.4 oz) instant lemon pudding
1 1/2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
4 eggs
1 1/4 c. milk
1 c. oil
3 Tbsp. lemon juice
1 tsp. lemon extract
2 c. shredded zucchini
1/4 c. poppy seeds
2 tsp. fresh grated lemon zest
In a large bowl, combine the flour, sugar,pudding mix, baking soda, baking powder and salt. In another bowl wisk the eggs mild, oil, lemon juice, and extract. Stir into dry ingredients just until moistened. Fold in the zucchini, poppy seeds and lemon zest. (I did not add lemon zest to mine at the reunion because I didn't have lemons on hand.) Pour into greased loaf pans and bake at 350 for 50-55 minutes or until toothpick comes out clean. Cool 10 minutes before removing from pans.

Blueberry Zucchini Bread (Also, thanks to Heather)

3 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
3 tsp. cinnamon
3 eggs
1 c. oil
2 1/4 c. sugar
3 tsp. vanilla
2 c. peeled and grated zucchini
1 c. blueberries

Grease your loaf pans. Preheat oven to 325. Beat eggs, oil, vanilla, and sugar together in a large bowl. Add dry ingredients. Stir until combined. Fold in zucchini and blueberries. Pour into pans. Bake for 1 hour and 15 minutes. (One hour was plenty in my oven.) Cool for 20 minutes Turn out and cool completely.

And finally, our Whirley Pop recipe (Whirley Pop not required)

Kettle Corn

1/4 c. vegetable oil
1/2 c. popcorn kernals
1/2 c. powdered sugar
1 Tbsp. sugar
1 Tbsp. brown sugar
Salt to taste

Add vegetable oil to a large pot. Heat the oil until you see veins appear (but not smoking) and add the corn kernals. Place lid on pot. Reduce heat when the popcorn starts popping (about medium). When popping over, add powdered sugar, and put the lid on. Shake well. Sprinkle with brown and white sugar. Put lid on and shake well. Return to low heat and cover for 1 minute, shaking often. Add salt to tatste and shake well. Enjoy!

  1. Glad you put these on here. This way I won't lose them and can always know where I can find them. This will be good for you too when you publish your blog you'll have it forever.. :)
